Ingredients
- Orange Juice: ½ Cup
- Jaggery: 1 Cup
- Water ½ Cup
- Dates Shredded: 2 Tbsp
- Dry Cherries Cut Into Small Pc: 2 Tbsp
- Dry Apricot Shredded: 2 Tbsp
- Black Raisins: 2 Tbsp
- Yellow Raisins: 2 Tbsp
- Dry Rasberries 2 Tbsp [Optional]
- Tutti Frutti [Red]: 2 Tbsp
- Tutti Frutti [Mix Colour]: 2 Tbsp
- Curd: 4 Tbsp
- Milk: ¼ Cup
- Oil: ½ Cup
- Whole Wheat Flour: 2 ½ Cup
- Baking Powder: 2 Tsp
- Baking Soda: 1 Tsp
- Cinnamon Powder: ½ Tsp
- Cardamon Powder: ½ Tsp
- Ginger Powder: ½ Tsp
- Nutmeg Powder: ½ Tsp
- Cashewnut [Pieces]: 2 Tbsp
- Almonds [Pieces]:2 Tbsp
- Pista [Pieces]:2 Tbsp
Directions
Step 1: Mix fruit juice, dates, cherry, and apricot, black raisins, yellow raisins, tutti-fruity [red and mix
colour] in a bowl mix it properly, cover the bowl with a lid and keep aside for 2 hours.
Step 2: Mix water and jaggery in a bowl make a smooth paste. Keep it aside
Step 3: Take curd add milk to mix it well keep aside.
Step 4: In a big bowl mix all the above mixer together add oil, cashew nut, almonds, pistachio,
cinnamon powder, ginger powder, nutmeg powder, cardamom powder mix well.
Step 5: Sieve wheat flour, baking soda, baking powder and cornflour. Mix well in one direction [folding
technique]
Step 6: Preheat the oven on 200 degree Celsius for 5-7 min.
Step 7: Grease the pan, put parchment paper into the mould, and Pour the batter into the mould.
Step 8: Bake cake on 160 degrees for 45-50 min [appro].
Step 9: Let completely cool. Remove cake from the mould, cut into slices, and garnish with powdered
sugar. Enjoy this vegetarian Christmas cake, without any guilt.
